Sourced from the highlands of Huehuetenango, this coffee is grown at elevation where cool mountain air and mineral-rich soils slow the ripening process, allowing deeper flavour development and refined balance in the cup.

 

From Finca El Injerto, one of Guatemala’s most celebrated farms, this lot reflects meticulous attention to detail — from cultivation through to processing — resulting in a coffee that feels both vibrant and composed.

 

Air-roasted at our solar-powered roastery, it’s developed to preserve its natural brightness while building depth and structure.

Finca El Injerto is internationally recognised for producing exceptional coffees. Its high-altitude environment, combined with volcanic soils and careful processing, creates coffees with remarkable clarity, complexity, and balance.

 

Roaster’s Note

Guatemalan coffees have a depth that I always enjoy bringing out through roasting.

This lot opens with a bright citrus lift, before settling into rich chocolate and a gentle spice that lingers softly. The goal is to let each layer unfold naturally — creating a cup that is expressive, balanced, and endlessly drinkable.
